New restaurant Trillium is a joint venture by Saturday Kitchen and Great British Menu chef Glynn Purnell and wine expert Phil Innes, founder of Great Western Arcade’s award-winning Loki Wine. Here’s everything you need to know.
Trillium is set to open in Birmingham city centre in September at Snow Hill, close to Great Western Arcade and Colmore Row.
The new restaurant in the business district promises to bring together “bold, seasonal dishes with a dynamic, ever-evolving wine list”, harnessing the talents of its two owners.
It will have an ever-changing menu, a vibrant terrace and is described as having a fresh perspective on refined dining — “relaxed, memorable, and soul-staining in the best possible way”.
Purnell, who was behind Michelin-star restaurant Purnells that closed last year, said: “At Trillium, choice is everything. We want guests to explore the menu in whatever way suits them — whether that’s a classic three-course meal or a custom selection of sharing plates. It’s about dining the way you want to, without rules.”

The wine list at Trillium
The wine list, curated by Innes will reflect the same spirit of exploration – rotating regularly to spotlight everything from hidden gems and low-intervention producers to iconic names.
Innes has plenty of experience through his successful business Loki Wine, with wine bars and shops at three venues in Birmingham city centre, Edgbaston and Knowle.
Innes added: “We’re building a wine list that’s as important to the restaurant as the food. It’s not about prestige — it’s about offering a dynamic, ever-changing selection that showcases undiscovered treasures and unexpected finds. There will always be something on the list to surprise and delight.”
What Trillium will be like inside
Trillium’s setting is immersive and intimate, shaped by a design narrative that blossoms from the quiet strength of its namesake flower. Inspired by folklore and nature’s rhythms, the interiors feature a romantic palette of wine-stained reds, beetroot, and plum — softened with sage, clay, and petal pink.
Ethereal details — from hand-painted finishes and etched glass to dappled woodland lighting — infuse the space with a sense of mystery, movement, and poetry.

The restaurant will include a vibrant outdoor terrace, just steps away from Colmore Row — perfect for sipping wine, sharing snacks, and soaking up the atmosphere in the heart of the city.

The men behind Birmingham’s new restaurant Trillium
Purnell is one of the UK’s most celebrated chefs. He has won many accolades in the industry, including Birmingham’s first Michelin star for Jessica’s back in 2005. His flagship restaurant, Purnell’s, held a Michelin star from 2009 until its closure in 2024.
Known for his bold flavours and creative cooking, he’s also a familiar face on BBC’s Saturday Kitchen and The Great British Menu.
Innes is the founder of Loki Wine, Birmingham’s leading wine retailer and bar, recognised for its award-winning wine list and accessible approach. Through Loki, Phil has helped shape the city’s modern wine culture.
