SushiDog picks Birmingham for first eatery outside London as “fastest growing city”

Popular SushiDog Japanese food eatery will open in Birmingham in 2026 as it emerged there is a “huge demand” by retailers to be in the UK’s second city.

SushiDog is already famous in London for offering customisable grab-and-go sushi and instagrammable dishes and now it’s rolling out to the regions, starting with Birmingham city centre.

It will open at Bullring in January 2026 – the first SushiDog in the Midlands and anywhere in the UK outside London. Hammerson, which owns Bullring and Grand Central, described Birmingham and its venues as being “in demand” as it is “the UK’s fastest growing city”.

SushiDog is known for customisable and grab-to-go sushi

SushiDog allows customers to create their ultimate meal, from hand-held burrito-style sushi rolls to vibrant sushi bowls and colourful salads. They say that “every bite is made fresh to order, with endless combinations to suit every taste”.

The new Bullring venue will be a kiosk on the upper level serving takeaway but also with room for customers to dine in on 25 seats.

Greg Ilson and Nick Goldstein founded SushiDog in 2018, opening their first branch at Westfield Shopping Centre in London. Within seven years, they had opened 10 stores including a flagship restaurant in Tottenham Court Road.

Since launching in London, SushiDog has gained a loyal following for its fresh ingredients, customisation options, and Instagram-worthy presentation.
